Loaded Baked Potatoes


Now who doesn’t love a good baked potato? What about stepping it up to a good LOADED potato? Nom nom nom..中中中Anytime I can get my picky boys to eat enough protein and veggies in one setting, I think that deserves a pat on the back. This recipe is super simple and your little ones can assist you, if you don’t mind little fingers grabbing at pieces of meat and veggies here and there.


  • Russet potato
  • Oil
  • Salt
  • Pepper
  • Broccoli, chopped
  • Cheddar cheese
  • Chives, optional
  • Bacon, optional
  • Chicken, optional
  • Milk
  • Cream cheese, optional


  1. Preheat oven to 375 degrees Fahrenheit
  2. Use fork to poke holes in potato
  3. Oil the potatoes, sprinkle with salt, then place on a baking sheet
  4. Bake for 1 hour 30 minutes, or until soft
  5. Let potatoes cool
  6. Cut potatoes in a vertical line, remove the inside, and place inside a bowl (separate bowls of using different filling..i.e chicken, bacon, etc.)
  7. Add broccoli, milk, salt, pepper, cheese, cream cheese, and meat selections. Mix together
  8. Put mixture into the potato and sprinkle with cheese
  9. Bake 15-20 minutes until cheese melts
  10. Serve with chives, sour cream, and/or crumbled bacon.

*You can omit cream cheese if the extra fat is of concern. However the cream cheese adds an extra creaminess to final product.
